AAPAM RECIPE | APPAM RECIPE WITHOUT YEAST

SOUTH INDIAN BREAKFAST RECIPES

Aapam is an authentic South Indian breakfast recipe, which is generally served with coconut milk and sugar or with Vegetable Stew or with coconut chutney too. Personally i am not a big fan of this Aapam but my hubby likes it. But i have never tried this at home. But in my mom’s place, my sister likes aapam very much and so amma makes it at times. Now at my sister’s place she used to make aapam more frequently and when i wanted to post the recipe for aapam i called her up and asked her, while she was rushing to office on a weekday.  I still don’t know why it didn’t turn out well for me , as usually her recipe always work out for me without fail. So i referred a old cook book which i bought after my marriage and added few ingredients extra and finally ended up in making super spongy Aapams.

So today let me share the recipe of how to spongy Aapam (without yeast).

the aapams turned out so well but i couldn’t handle the camera and the aapam pan as it gets cooked very fast. so very sorry about the picture of the aapam. Will soon update with good pictures of aapam when i make on a weekend.

INGREDIENTS:

RAW RICE (SONA MASOORI RICE) 1 CUP
PAR BOILED RICE 1 CUP
URAD DAL 1/4 CUP
COCONUT(SCRAPPED) 1/2 CUP
COOKING SODA 1/4 TSP
SUGAR 1/2 TBLSP
SALT AS NEEDED
POHA | AVAL 1/4 CUP

Aapam

METHOD:

  • Wash and soak the rice, urad dal and poha for 5-6 hours.
  • Grind it into a smooth paste along with the coconut.
  • Add salt and keep it aside for fermentation.
  • It took 5-6 hours for me to get the batter fermented.
  • It depends on the weather conditions of the place you live in.
  • Add cooking soda, sugar.

Aapam step 1 

  • Keep the consistency of the batter slightly thinner than the dosa batter.

  • Keep an aapam pan ready on the stove top.  The pan should not be too hot.
  • You can even  use a normal deep pan. I used non stick aapam pan.
  • Pour batter towards the centre of the pan and rotate the pan to spread the batter.

Aapam step 3

  • Cover the pan with a lid and after few seconds you can see the aapam got cooked in the centre and  lacy borders on the sides.
  • No need to flip it on the other side.

  • Aapam is ready to serve now.

Note:

  1. You can make it as a normal dosa too , if you are not comfortable in making aapams in pan.
  2. Making proper shapes comes purely by practise so do not worry about that.
  3. Instead of adding coconut while grinding, you can add coconut milk before making the aapams. In this version, if you have anyone at home who do not like aapam , can be served dosa .
